scones

cabin cooking

one of Steve's favourite treats are fruit scones with jam and cream

Scones
makes about 16
Ingredients:
450g self-raising flour, plus more for dusting
¼ tsp salt
110g butter or margarine
60g caster sugar

milk to mix
2 eggs

optional
sultanas
cheese (don't add sugar)

jam and clotted cream, to serve

Directions:
Heat oven to 220C/fan 200C/gas 7.
Sieve flower and salt
Rub in marg/butter, eggs and sugar.

Mix till soft rolling dough with milk, add in optional dried fruit or cheese

roll out and cut with crinkled cookie cutter

bake near top of the oven for 10 mins
